Louis Jadot has a number of wineries throughout the Burgundy region giving them ultimate control over the wines they produce.
La Sablière Winery - Beaune
This iconic winery was completed for its first vintage in 1997. Rather than arranging the tanks in a line, as is normally the case, Louis Jadot chose a circular layout, designed to maximise the use of "pigeage" where the cap is repeatedly submerged during the fermentation process - essential to "fix" the wines' colours and tannins.
The cellars at Sablière are exclusively reserved for wines kept in barrrels. One section is for vinification in cask whilst the other section is exclusively reserved for the ageing of the wines. In 2009, as part of the 150 year celebrations of Louis Jadot, the winery was expanded to create a separate area dedicated to white winemaking.
Cellier des Pierres Rouges - Givry
Opened for the 2008 harvest, this winery was named after the red chalk that dominates the surrounding landscape. Cellier des Pierre Rouges is the home for Louis Jadot Bourgogne Pinot Noir. A 6000hl winery, it mirrors the principles of La Sablière where a circular system makes movement of both grapes and wine as gentle as possible, using a gravitational system.
Château des Jacques Winery - Moulin à Vent - Beaujolais
The Château des Jacques winery in Beaujolais practices traditional fermentation for all of the Louis Jadot estate grown Cru Beaujolais wines including Moulin à Vent, Morgon, Fleurie and Chénas. For more than 40 years, the grapes have been fermented like Pinot Noir wines in open tanks with "pigeage" and "destemming". Typically maceration is carried out for more than 20 days (24-27). In addition to the main Château des Jacques wines, individual "Clos" are vinified separately and aged in new oak barrels for about a year before being bottled. Each has its own distinctive personality reflective of their separate 'terroirs'.
Combe aux Jacques Winery - Beaujolais
Established in 1998 in order to extend Louis Jadot's philosophies into Beaujolais Villages. The wine fermented here makes up the heart of our Beaujolais Villages blend.
Domaine Ferret - Pouilly Fuissé
In 2008, Maison Louis Jadot bought this magnificent 18-hectare domaine, which is located in the heart of the Pouilly Fuissé appellation. The Ferret family, the former owner played an important part in creating the renown of this highly respected appellation.
