The nose is very expressive and intensely aromatic, its great complexity standing out and revealing many aromas such as chamomile flowers, autumn fruits, nuts, patisserie and mineral notes. The palate is lively, full bodied, unctuous and velvety with a long, fresh and saline finish.

The 2016 harvest began at CVNE on 19th September and ended on 31st October. The year’s growing cycle was 161 days long, and of excellent quality, characterised by the absence of rainfall from May to October. The year began with a warm, dry winter followed by an initially rainy spring. Temperatures in August were above average and with no rainfall, so delaying the growth cycle. September brought the arrival of some welcome rainfall, providing relief for the vines and also permitting good ripening conditions for the grapes. This resulted in a late harvest of very high quality grapes in excellent health.
Monopole Clásico is made from a blend of varieties, hand harvested at their optimum ripeness and picked into 20kg boxes. The grapes are pressed gently and, as in the 1970s, the must is transferred to concrete vats where it is allowed to settle. The alcoholic fermentation takes place in stainless steel vats and once completed, the wine is racked, along with its fine lees, to used barrels to complete its ageing. These are barrels which have been used two or three times before and with capacities of 300, 400 and 500 litres. The wine remains in barrel for around 8 months with periodic tasting. The uniqueness of this wine is in the addition of a small amount of Manzanilla, which is made according to the traditional technique including a period of biological ageing under a layer of “flor” yeast.
