An atypical vintage with unequal maturation due to water stress and lack of temperature contrasts between days and night. These conditions strengthened the need for grape selection in the vineyard and winery. The main characteristic of this harvest has been the excellent health of the grapes. Ripening was a week ahead of previous years, but the resulting wines were well-structured with high polyphenol content and good colour consistency.
On arrival at the winery, the grapes are cooled and macerated prior to alcoholic fermentation which takes place in stainless steel tanks at a controlled temperature. The young wine is then transferred to a mix of American and French oak casks to mature for up to 2 years before being bottled. Once bottled, it remains in our cellars to continue its maturation prior to release to the market.
