Exotic notes of candied citrus fruit, coriander seed and sweet spices. Hints of vanilla and cinnamon on the nose. The palate is generous, with note of dried rose and candied mango. Fresh finish with spicy nuances.
Vineyards
Manual harvesting after 30 to 40 days passerillage on stump (passerillage = slow dehydration directly on the vine to concentrate the sugars, acids and aromas naturally contained in the grapes).
Vintage
We had to “keep calm and carry on” throughout this season of drought and heat to constantly adapt the winegrowing work right up to the last minute; responding fast to curb the vegetation when the welcome rains arrived and remaining patient to allow the grapes to reach full maturity. All this made 2022 an astonishing vintage that, as it turned out, was more luminous than sunny.
Winemaking
Whole bunch pressing, light settling, very long fermentation with indigenous yeasts in big wooden barrels (600 liters). Because of the high sugar content of the must, fermentation naturally stops at around 140g of residual sugar.
