Winemaking focuses on gentle handling of fruit, minimal movements of wine and slow maturation in cool cellar environments. Many fruit parcels are hand-picked and pressed directly to barrel and tank for the whites and de-stemmed to open fermenters for reds. Most fermentations are natural and malolactic fermentation happens in barrel.
