Domaine de Bila-Haut Wines


Roussillon wines from contoured terraces with stony soils and rich geology.
The Roussillon area was made for Michel Chapoutier and it was in Latour de France that he set up Domaine de Bila-Haut, on a combination of soils perfectly suited to spicy Syrah, fruity Grenache and tannic Carignan – key Languedoc-Roussillon varieties – basked in the southern French sun and freshened up by the coastal ‘tramontane’ wind. Black and brown schist give the wine the sunny ripeness, gneiss minerality and freshness and limestone and chalk strength and balance.
A number of Sélection Parcellaire (single vineyard selection) wines are also made at this unique domaine.

90% Grenache Gris and 10% Grenache Blanc blended from vineyards planted on very old terraced schist soils. Long maceration and 6 months maturation in large 600 litre demi-muids barrels with regular batonnage deliver this exceptionally complex wine with abundant peach, apricot and floral characters. The textured palate shows abundant hint of salinity on the long, lingering finish.

100% Grenache Noir Vin Doux Naturel from ancient terraced vineyards. Made from hand-harvested grapes where the fermentation is stopped by addition of spirit. The wine is then aged for 8 months in large vats before bottling and undergoes further 3 months maturation prior to the release. Black fruit, cloves, spice and liquorice sing on the palate that is underpinned by balancing acidity and sumptuous tannins. Perfect served slightly chilled, a French cousin of port.
