Domaine de Bila-Haut Wines

Roussillon wines from contoured terraces with stony soils and rich geology.

The Roussillon area was made for Michel Chapoutier and it was in Latour de France that he set up Domaine de Bila-Haut, on a combination of soils perfectly suited to spicy Syrah, fruity Grenache and tannic Carignan – key Languedoc-Roussillon varieties – basked in the southern French sun and freshened up by the coastal ‘tramontane’ wind. Black and brown schist give the wine the sunny ripeness, gneiss minerality and freshness and limestone and chalk strength and balance.

A number of Sélection Parcellaire (single vineyard selection) wines are also made at this unique domaine.

    Red companion to the white 'hidden stone' wine, from Syrah, Grenache and Carignan parcels planted on gneiss, schist and Kimmeridgian limestone. The influence of the sun-drenched mixture of these soils, together with long 4 week maceration and maturation in concrete vats, deliver this ripped red with complex characters of leather, graphite, pepper, black fruits and Mediterranean shrub herbs. Rich dense and fleshy with delicate tannins and a great finish.

    100% Grenache Noir Vin Doux Naturel from ancient terraced vineyards. Made from hand-harvested grapes where the fermentation is stopped by addition of spirit. The wine is then aged for 8 months in large vats before bottling and undergoes further 3 months maturation prior to the release. Black fruit, cloves, spice and liquorice sing on the palate that is underpinned by balancing acidity and sumptuous tannins. Perfect served slightly chilled, a French cousin of port.
